The better way is to begin by taking off the top and bottom piece. Slice one side all the way down to the body to open it up then run your knife around the inside to take the stems and seeds out in one piece. Pop the center of the top piece and add it to the rest of the body, as well as the bottom piece. From here, slice, dice, and cut your sweet peppers as required in your recipe. Have fun cooking!
